I was playing a spot a few weeks back and there were 3 food trailers next to each other and each one had no less then 20 items in them....2 of the trailers were carny style and could be real nice if they cut back and featured something insted of selling everything...

A guy who worked for me coined the Phrase " Go Joints "....That's where the owner says..."Let's sell these and see if they Go"....

Everyday there was new signs being put up...Here's a short list of what each trailer had:

Nachos
Fries
Burgers
Polish Sausage
Phillys
Funnel Cakes
Fried green tomatoes
Corn dogs
Chili dogs
Hot dogs
Lemon shake ups
and about 10 other items.

There was a guy that asked to book in somewhere and they asked him what he sold and he gave them a list of like 100 items. His joints always had a million items.

We always called the "general stores". Seem like you see alot of them in Ohio.

What ever happened to the full-sized semi-truck trailers that served large menus (were they called cook houses?) that used to be on even the mid-sized Shows? I don't think I've seen one of those in close to 30 years now. Another feature of the carnivals of my youth that appears to have gone away.
I've never been "with it", just been an interested observer of carnivals for more than 50 years.

I remember Don and his cook house on key city, Lenoard Guest with his big cook house on the Collins Show. As I remember they cracked the nut with show people and made thier profit on the marks. Rel sit down cook houses. Very few left if any

How about Cook houses that took meal tickets...That's a thing of the past.

or a cookhouse that gave actuall credit????i used that credit a few times when i was younger,lol,lol.......some long nights back then!!!!i remember one time getting credit on a pack of marlboros,a pair of mud boots,and a meal from a commissary once!!!!!
